Monday Funday

We look forward to Monday's in the Mercado household. A different take to the start of the week from back in the day when I was a working woman!
Mondays are the days that Felix is "off". No practice, and usually no travel, meetings, or calls. This is usually the case.... so we try to take advantage of family days on Mondays.

We start by having a family breakfast together cooked by yours truly, then spend some quality time together, usually get in a good nap, and then they come with me when I go to teach water fitness at the JCC at night while Felix feeds Emma dinner.

This morning I tried to modify an egg-substitute recipe I found in my new cookbook. Note to self: do not alter recipes! I threw together some asparagus, red peppers, and riviera blend lettuce (wilted down) with some egg beaters mixed with fat free cream cheese. GROSS. Felix couldn't even finish his plate....and he will usually eat anything I give him, so this was particularly bad. Emma enjoyed her Dora yogurt, so she was in the clear.

After breakfast, Emma made Felix come into her playroom for a tea party. This was just about the cutest thing I have EVER seen! He was drinking his cup of coffee on the couch and she came over to get him and said "Daddy, come. Coffee on floor".


After which we took advantage of the amazing sunny 60 degree weather outside and brought Emma to the park. This park was a bit old for her and she was way too scared to climb the structures by herself......really holding up the line of kids dying to get into the playhouse and down the slide!
She eventually took off running with her Daddy and exploring the grounds.

......and I couldn't resist kissing this little love. Such a happy girl these days.

After the park we went to Olive Garden for soup & salad. And of course, we had to stop through the McDonalds drive through to cool off with a mini ice cream cone after running around in the newfound heat outside!
